General Information: Beneath the papery outer skin is a flesh very similar to jicama or sunchokes. Raw, they are refreshing but plain cooking pulls out some of the starchiness and accents the sweet. Their flavor is understated, yet addictive. Makes surprisingly simple and scrumptious desserts, too! Good source of potassium and B vitamins. |
